Dates Processing

The processing of dates in our factory is a meticulous and careful procedure to ensure that the final product is clean, free from contamination, and of high quality. Here’s an overview of the key steps involved in this process:

  1. Raw Material Storage: Dates are stored in a shaded area, protected from dust, heat, and insects. This ensures that the flavor and nutritional value of the dates remain intact.
  2. Fumigation: To prevent insect infestations, dates are placed in airtight chambers and exposed to a noxious gas, typically methyl bromide (CH3Br), for 72 hours. This process can be conducted at atmospheric pressure or under vacuum conditions, with the latter being more efficient but costlier (not suitable for organic dates).
  3. Sorting: Fumigated dates are carefully sorted based on their condition and size, ensuring uniformity.
  4. Washing & Cleaning: Dates undergo a thorough cleaning process as they pass through rotary washing drums equipped with water showering nozzles.
  5. Drying: After cleaning, the dates are dried using either diesel or gas-fired drying systems.
  6. Grading: Dates are graded to achieve homogenous quality and size in accordance with national and international market specifications. This grading process is performed manually and is market-driven. Any rejected dates are typically sold for by-products manufacturing.
  7. Packing: The processed dates are packed using shrink-wrap machines in plastic bags. This additional layer of protection helps preserve moisture and maintain the quality of the dates before they are placed in boxes.

The meticulous attention to detail throughout the processing ensures that consumers receive dates that are not only delicious but also safe and of high nutritional value.
